Breakfast cookies

Yes, you can have cookies for breakfast, especially when they are sugar free, gluten free and dairy free.   I made a tray of 15 last night and ate 7 of them warm from the oven.  I will give the directions at the end of the blog.

I don't know why, but I was up at 5:45 am and decided to get started with my day.  Back from the gym  by 9am, and with an hour to kill before Costco opened I washed two loads of laundry and got them hung on the line!  I didn't get much at Costco but I did have some 5x7 reprints made of 10 or 11 pictures of my Alaska trip.  Unfortunately I didn't print a couple that I really wanted.  It is fairly inexpensive so I might just go back and get some 4x6's of some others.  I thought I picked out some I thought might make good subjects for painting/drawing classes.   I can include objects from the photos and add my own creations if I want.

I've noticed driving back home from my outings that two mobile homes have been dismantled and moved out.  One seemed to be falling apart but one might have been salvageable.   I think it's odd that they both occurred at the same time, but it could have been illness or death of the occupants, and the condition of them makes it unlikely they are salable.  I think the Park ownership wants to spruce everything up and probably hates older models such as mine.

My haircut looks as good today as it did yesterday, and that is even with sleeping on it overnight.   I might have one of my kids take a photo if anyone shows up this weekend.  The selfie puts me too close to the camera and I think I'd look better at more than arms' length away!

I've been wondering:  whatever happened to "elevator music".  All I hear anymore, in any place, with any age people around, is rock - some old stuff and some new.  I can't stand either one these days.  It wasn't so bad when there was more diversity, but now it's only rock and most of it isn't worth crap.

Here is the recipe for breakfast cookies:
Ingredients
2 ripe bananas
1 cup steel cut (or quick oats).
(Note, I found Red Mill steel cut oats to be much cheaper in the baking section rather than in the cereal dept.)

Directions:
In a bowl, mash bananas well.  Mix with oats.  They will be very moist (but not too runny - if so lightly add more oats).
Spoon into cookie size portions.
Bake 350 for 15 min.

Makes 12-16b cookies (I got 15)

Fun additions: 
 Walnuts
Pecans
Unsweetened coconut flakes
Almond butter or hazelnut butter
1 Tbs flaxseed and 1 Tbs Brewer's years (great for pregnant or nursing moms)
Dried fruit
1/2 tsp cinnamon
Dark chocolate chips

I think anyone who reads my blog can probably peg me as a lover of walnuts/chocolate chips.  They made a delicious addition to the cookies.

In retrospect I should have made them first thing in the morning as they are super delicious just out of the oven.  They are great left overnight as well, but I'd probably have eaten all 15 at one go this morning if they were hot.

  1. I buy that photo quality, smooth and shinny, paper to print out the pictures I want to save. If I don't care about the quality, I just used heavy printer paper. I print the pictures at the 5 x 7 inch size and then cut them out. They look more professional if you leave a small boarder all around each picture.

    1. Since I have only a black & white printer, I never print photos. Seeing how relatively inexpensive Costco is for making prints I think I will use them in the future for this service.

      Way back when I lived in Asheville I had a color printer and decided to print a few photographs. I've never seen ink being used so fast in my life, so I vowed then and there I wouldn't need a color printer from then on.

  2. Looks like a fun recipe but I have one question, "Steel cut oats? Uncooked?" They would break teeth. Did you mean old-fashion rolled oats?

    1. I find the steel cut oats to have a different texture in their natural form, but have always eaten organic oatmeal, the kind that takes longer to cook. I found no problem with the crunchiness in the cookies.

  3. Great recipe for folks on an oil and sugar free diet. I agree there is a lot of difference between quick oats and steel cut. Which did you use?

    1. I used the steel cut, my first ever experience with them. I don't think I would like them as breakfast because I love the organic old fashioned rolled oats. I guess it's a matter of what you grew up with.

      I think it is a great recipe for just about anyone. And you can add other ingredients, such as nuts and spices. Bananas and oats - great combo. I should have mentioned that I used a spatula to loosen the cookies when I took them out of the oven, and then after they cooled enough to handle they came right off the baking sheet.

  4. I never did understand why people complained about elevator music. Always sounded fine to me. I grew up with lots of Rock & Roll music and loved it at the time but it's not often I listen to it anymore. On our Sirius Satellite Radio which I have in the Jeep I listen to a lot of the old mellow standards from the 40's and 50's. On my computer it's all instrumental new age ambient I listen to. I'm a Cookie Monster as well:))

    1. When I listen to Pandora radio I sometimes have it on the Julie London channel, although I've never heard them play anything by Julie London. I also listen to music of the 40's as well as Baroque classical music. I have never liked rock very much, although a song came along now and then that was memorable. I always liked Dire Straits and Jerry Garcia but you don't hear much of them any more.

  5. You must have gotten a really good hair cut. I had mine cut last week and the usual girl wasn't there so I let someone else cut it and I am really pleased.
    You cookie recipe sounds good.

    1. This is the hairdresser I was going to quit going to after the mix-up with the salon moving and my getting there on the wrong day. I never did find another hairdresser and I decided to go back to where I knew I could get good haircut.

  6. The cookie recipe seems simple enough even for me to follow...too bad it is summer but I may try it in the winter. I specially liked the sugar, gluten and dairy free part.

    1. The only thing about trying it now is that you have to turn on the oven. I have only one ripe banana this morning and am thinking about making half a recipe.

  7. I have two bananas that are very ripe in the fridge - about ready to throw out because I like them before they are very ripe. But right now they are perfect for baking. When they were this ripe I used to make banana bread so I wouldn't waste them. I don't have the oats you specified, but I have Quaker Oat Cereal pouches that I use for hot oatmeal some mornings. I'm going to try them and see if they will work. They have apples and cinnamon in them, so that might not be too bad. I'll let you know how they come out. Gonna bake them right now! :) Thanks for the recipe!

    1. I think the cereal pouches would work very well, as the recipe does say quick oats are a substitute for steel cut. I will be interested to know how they turn out. I'm going to try adding a shake of cinnamon in my next batch.
